Coffee has a positive effect on health due to its high content of antioxidant compounds. The potential activity coffee is strongly influenced by chemical compound profile. This study aimed analyze the different solvents metabolites profile, activity, and determine relevant functional groups which positively contribute coffee’s activity. In this study, methanolic extract samples from robusta arabica varieties were fractionated liquid-liquid fractionation method using four with polarities. ABTS (2,2'-azinobis (3-ethylbenzothiazoline-6-sulphonic acid) cupric reducing capacity (CUPRAC) assays applied measure fractions. Fourier Transform Infrared- Attenuated Total Reflectance (FTIR-ATR) based chemometric approach was used identify as fingerprinting profile Correlation between FTIR-ATR fractions studied multivariate data analysis, i.e. Principal Component Analysis (PCA) Orthogonal Partial Least Squares (OPLS). From reliable PCA model evaluate produced. correlation characterization can be analyzed OPLS obtained. suggests that highest in found ethyl acetate fraction both samples, while having phenol, carbonyl, cyclohexane, aromatic, amide, phenyl, amino, alkene groups.
